I just finished taking an evening class at Stanford. The last lecture was on the mindbody connection―the relationship between stress and disease. The speaker (head of psychiatry (精神病學) at Stanford) said, among other things, one of the best things that a man could do for his health is to be married to a woman, whereas for a woman, one of the best things she could do for her health was to nurture (培育) her relationships with her girlfriends. At first everyone laughed, but he was serious.
Women connect with each other differently and provide support systems that help each other to deal with stress and difficult life experiences. Physically this quality "girlfriend time" helps us to create more serotonin一a neurotransmitter (神經傳遞素) that helps combat depression and can create a general feeling of well being. Women share feelings whereas men often form relationships around activities. They rarely sit down with a buddy (伙伴) and talk about how they feel about certain things or how their personal lives are going. Jobs? Yes. Sports? Yes. Cars? Yes. Fishing, hunting, golf? Yes. But their feelings? Rarely. Women do it all of the time. We share from our souls with our sisters, and evidently that is very good for our health. He said that spending time with a friend is just as important to our general health as jogging or working out at a gym.
There's a tendency to think that when we are "exercising" we are doing something good for our bodies, but when we are hanging out with friends,we are wasting our time and should be more productively engaged―not true. In fact,he said that failure to create and maintain quality personal relationships with other humans is as dangerous to our physical health as smoking! So every time you hang out to schmooze (閑談) with a gal pal, just pat yourself on the back and congratulate yourself for doing something good for your health! We are indeed very very lucky. So let's toast to our friendship with our girlfriends. Evidently it's very good for our health.

Why does cream go bad faster than butter? Some researchers think they have the answer, and it 1 down to the 2 of the food, not its chemical composition―a finding that could help 3 some processed foods of chemical preservatives (防腐劑) .
Cream and butter 4 pretty much the same substances,so why cream should sour much faster has been a mystery. Both are emulsions (孚L狀液) 一tiny globules (小球體) of one liquid evenly distributed throughout another. The difference 5 in what's in the globules and what's in the surrounding liquid, says Brocklehurst, who led the 6 .
In cream, fatty globules drift 7 in a sea of water. In butter, globules of a watery solu?tion are locked away in a sea of 8. The bacteria which make the food go bad 9 to live in the watery regions of the mixture. "This means that in cream, the bacteria are 10 to grow throughout the mixture," he says.
When the situation is 11 ,the bacteria are locked away in compartments (間隔室) bur?ied deep in the sea of fat. 12 in this way, individual colonies cannot spread and 13 run out of nutrients (養(yǎng)料) .They also slowly 14 themselves with their waste products. "In but?ter, you get a selflimiting system which stops the bacteria 15 ," says Brocklehurst.
The researchers are already working with food companies 16 to see if their products can be made resistant 17 bacterial attack through alterations to the food's structure. Brockle?hurst believes it will be possible to 18 the emulsions used in salad cream, for instance, more like 19 in butter. The key will be to do this while keeping the salad cream 20 and not turning it into a solid lump.
